Total Time:25-30 Minutes.
Ingredients:
- 3-Large medium eggplant(baingan)
- 2-Medium Potato (boiled and mashed)
- 1-Cup of fresh fenugreek leaves(chopped)
- 2-Medium onion chopped
- 1 tbs- Cumin seeds
- 1 tbs- Red chilli powder
- 1 tbs-Turmeric powder
- 1 tbs- Garam masala
- 2 tbs- Tomato paste
- 1- Cup of water
- Salt to taste
- Fresh coriander leaves chopped
- Half lemon for sprinkling
- Wash the eggplant(baingan) in the water and pat dry them.and you can also roast eggplant on open flame or roast in the oven or microwave, its up to you. if you want smokey eggplant then you can roast on open flame.
- I'm using microwave for roasting eggplant .,apply some oil all over on eggplant for roasting and keep the eggplant in microwave safe dish and keep on high power 10-12 minutes time of roasting will depend on size of eggplant and you can extend the time if eggplant not roasting properly like-3-4 minutes more....
- Let it cool and peel off the skin then mashed the eggplant and same this time mash the boiled potatoes and mix with eggplant mash.And you can also roasted the potatoes in microwave as well.
- Heat the oil in pan on medium high and add cumin seeds and then add onion fry till onion become light golden and then add red chilli powder,garam masala,tomato paste,salt to taste and turmeric powder mix well and stir for 2-3 minute
- Add eggplant and potato mashed and mix well and add fresh green fenugreek leaves chopped and then little water and stirring and again mix well and cook for 8- 10 minutes and during cooking string in between. and sprinkle the lemon juice on the top .
- Eggplant bharta is ready serve hot with rotis,parathas..
