Instant Buttermilk Curry


Total Time:5-8 Minutes.

Ingredients:
  • 2 cup-Curd/Buttermilk
  • 1- Onion-slicing cutting 
  • 1-2 -Green chillies
  • 1 tbs- Turmeric powder
  • 1 tbs - Dry fenugreek leaves
  • 1 tbs- Cumin seeds
  • 1/2-tbs -Tomato paste 
  • Salt to taste.
  • Fresh coriander leaves chopped
  • 1 Cup- or add more water for making  good consistency of buttermilk
Direction: How To Cook This Recipe.
  1. Beat the curd together with some water or make a buttermilk.
  2. Heat oil in a pan/kadai, add cumin seeds,when it splutters,add onion fry till it become light brown and add dry fenugreek leaves,green chilli,  (add tomato paste- for making sour curry-its optional) and add turmeric powder,salt to taste and cook these stuff for 2 minutes and add the whisked buttermilk.
  3. Let it warm through for about 3-4 minutes.Keep stirring constantly till you see steam coming out.Be careful to,don't let it boil,otherwise the curd will curdle, switch  off the flame.And garnish with, chopped fresh coriander.
  4. Serve this curry warm with some white rice or Roti.

Vegetable Pinwheel Sandwiches


Total  Time:10 Minutes

Ingredients:
2 Bread slices wholegrain/white bread
1/2- Carrot grated
1/2 -Cucumber grated
1/2-Avocado slices, mashed
1-Small onion chopped
1 Cup-Plain thick yogurt/curd
Small cup  of water

Direction: How To Make This Recipe:
  • Take 2 bread slices and cut the edge from all 4 sides(Don't waste the sides,you can prepare bread crumbs from it.)
  • Roll them flat using chapati roller,roll as thin as possible,this help us to roll later for preparing sandwich.
  • Place them such that they are overlapping each other in a single row.
  • Wet the edges of the sides overlapping and seal the edges to join them by pressing them together.
  • In a bowl add yogurt,carrot,cucumber(grated) and onion,(chopped),add avocado mashed, and mix together( If you like you can add black salt,pepper or any kind of chutney,as per your choice.)
  • Place these mixture at one end of the slices.And now slowly roll the sandwich tightly holding two bread slices,roll up bread from one end to another.
  • Cut the rolls in to 1 inch pieces or cut in to half pieces.
Note :
  • You can make this pinball sandwich with 4 slices of bread together.
  • You can spread the mixture on bread slices
  • you can use mayonnaise instead of yogurt.

    Russian kale and Spinach recipes





    Total Time:35 Minutes
    Prep Time:15 Minutes.
    Cook Time:20 Minutes.

    Ingredients:
    My little veggie garden


    •  1 Bunch-Russian kale
    •  1 Bunch-Spinach
    • 2-3-Green chillies
    • 2-Medium Onion
    • 1 tbs- Garlic ,curshed
    • 1 tbs-Ginger,crushed or grated
    • 1 tbs- Turmeric powder
    • 1 tbs- Tomato paste
    • 1-2 tbs -Oil
    • Salt to taste.
    • Cup of water


    Direction:How To Cook This Recipe.
    1.  Remove the stems from  kale and chop and do the same for spinach and  wash and clean these both things in a running water and drain excess water.
    2. Add them to the pressure cooker and add  2-3 cups of water,or add enough water so there  is at least 2 inches of water above them .If you are using pressure cooker then pressure cook it for 2 whistle over medium flame.Or if you are cooking in a pan then cook it until turn soft for around 10-12 minutes.
    3. Turn off the flame after 2 whistle.Remove the cooker from heat and allow it to cool down.once the steam is gone,open the cooker and check the kale and spinach,you should be able to press them easily with your fingers.
    4. Heat oil in a pan over medium flame,add onion fry it turns light golden and then add green chillies,ginger,garlic and tomato paste and turmeric powder and salt to taste and mix well and stir them for 2-3 minutes.
    5. And then add boiled kale and spinach mixture and mix well and turn off the flame and grinder the mixture with hand blender,blend the mixture to a smooth puree ,and one cup of water,         ( don't throw away the water once you have drained the kale and spinach,we can add the same water in the gravy) mix well and  then cook for 5-8 minutes.{ Or you can transfer boiled kale and spinach in to a large jar of a mixture grinder or a blender.,bland the mixture to a smooth puree.} 
    6. Remove from the flame and serve warm with Roti/Rice/Makki di roti(Corn Flour Roti)

    • You can grind the mixture to a smooth puree on keep the texture coarse per your choice.
    • To make it spicy,increase the amount of green chillies and add garam masala.
    • For mashing if you don't have blender,then you can use potato masher,if it is too thicker then you can add splash of water,mashing it by hand takes some efforts.       

    Instant Aloo Matar(Pea and Potato) Curry Recipe




    Total Time:15-17 Minutes.


    Ingredients:

    2 Cup- Frozen pea-boiled(Increase the quantity as your choice)
    3 Potatoes-Boiled
    1 Medium- Onion
    1 tbs-Ginger,chopped
    1 tbs-Tomato paste
    1 tbs-Dry fenugreek seeds
    1 tbs-Red chilli powder
    1 tbs-Turmeric powder
    1 tbs-Cumin seeds
    1 tbs-Oil
    Salt to taste


    Direction: How To Cook This Recipe:

    • Boil the pea in a pan for 8-10 minutes till they become tender.
    • Place the potatoes in a microwave and cook for full power for 7-8 minutes.And then peel them and cut in dice pieces.( You can place the potatoes in a pan and cover with the minimum of boiling water,cover with lid and simmer gentle for approximately 15-20 minutes until just tender, once cooked drain immediately.)
    • Heat the oil in  a pan and add cumin seeds,onion,fry till onion become light brown and add other spices like red chilli powder,dry fenugreek leaves,tomato paste ,salt to taste and mix well,stir them and cook for 2 minutes.
    • And now ad potato and add boiled pea and add little amount of water ,mix well and cook for 5 minutes and a stirring  continuously and then garnish with coriander leaves. after that remove from the flame.
    • Transfer the dish in a serving bowl ,Serve this delicious green pea and potato curry to your guests or family members. Pair it with roti or rice and yogurt raita(Dip) of your choice and  make it complete mealπŸ˜‰

    Left Over Rice Paratha With Jeera(Cumin Seeds) Yogurt/Curd Raita (Dip)Recipe



    Preparation Time:15 Minutes
    Cooking Time:1 or 2 minutes per paratha

    Ingredients:
    • 1 Cup cooked rice
    • 2 Cup wheat flour
    • 1 tbs Red chilli powder
    • 1 1/2 tbs Turmeric powder
    • Salt to taste
    • Dry fenugreek leaves
    • Water for kneading as per requirement
    Direction: How To Cook This Recipe:
    For  Rice Paratha :
    • Take cooked rice and wheat flour and add red chilli powder,turmeric powder,salt to taste and dry fengureek and mix together,and  start knead ,knead in to stiff dough using required water, cover the dough and set a side for 10 minutes.
    • And after 10 minutes knead the dough again and make medium sized balls from the dough.
    • Start rolling the paratha,take one ball ,dip it into dry flour.
    • Heat the pan or tawa on medium flame,when pan is medium hot,place paratha on it.
    • Roast the paratha,turning sides and basting with oil,till golden from both side.
    • Make all rice parathas this way.either serve them hot or stack them in roti basket.
    • Serve  with yogurt raita (yogurt Dip) or Butter







    For Jeera(Cumin Seeds) Yogurt/Curd Raita(Dip) Recipe:
    Total Time:10 Minutes.
    Ingredients:
    • 1 or 2 teaspoon cumin seeds
    • 1/1/2 Cup chilled fresh yogurt(Curd)
    • 1 tbs chopped fresh coriander leaves
    Direction: How To Cook This Recipe:
    • Heat a pan,keep the flame or low and then add 1 or 2 teaspoon cumin seeds.
    • Stir and roast the cumin seeds,till they become crisp and light brown, make sure don't be burn or over cooked.
    • Then take the roasted cumin seeds in a mortar with pestle crush the cumin to a powder.
    • In a bowl take 2 cup chilled fresh yogurt(curd) and whip till smooth and if you like add little water and now add crushed cumin seeds powder and add chopped fresh coriander leaves and mix well and you can add 1 tbs black salt as well (optional) .
    • Serve Jeera(Cumin Seeds) Yogurt/Curd Raita(Dip) Recipe with paratha or snacks.
