Stuffed Green Chillies Fry Recipe.




Total Time:13 Minutes.

Ingredients:

  • 4-5-Green chilli
  • 1 tbs- Fennel seeds,crushed or powder
  • 1 tbs- Turmeric powder
  • 1 tsp-Salt
  • 1 tsp-Caraway seeds
  • 1 tsp-Cumin seeds
  • 3 tbs- Mustard oil

Direction:How To Cook.
  • Wash the chilli and dry them and slit them and keep the stem intact to hold it together.
  • And combine all the ingredients well with 1 tbs oil. and stuff approximately 1 tsp in to chillies.
  • And heat the 2 tbs oil in a pan and place stuffed chilli,and cover with lid,and add in leftover stuffing mixture and cook on low heat till the chillies become slightly soft.
  • Flip the chilli and cook on all sides keeping the flame on medium.
  • Once the chills are cooked from all sides, switch off the flame
  • Finally serve stuffed chilli fry as a side dish with you meal.

Sweet Rice(Zarda Pulao) Recipe..



Cook Time:15 Minutes.

Ingredients:
  • 1 Cup- Uncooked Rice
  • 1/2 Cup-Sugar 
  • 20-25-Cloves
  • 8-10-Almond,chopped
  • 4-5-Green Cardamom Pods(crushed)
  • 1 tbs-Ghee
  • 1 tsp-Yellow food colour
  • 3 Cup-Water
Direction:How To Cook.









  • First soak the rice in a bowl  for 15 Minutes.
  • And then heat the ghee in a wok/kadai and add cloves and saute for 2 minutes and then add rice with water and add sugar,green cardamon and yellow food colour and mix well.
  • And then cover and cook on simmer flame for  10-15 minutes.
  • Stir in between to prevent from burning.
  • Cook until the rice is cooked completely, and don't overcook as rice turns mushy.
  • And serve sweet rice/zarda pulao hot garnished with few chopped almonds.
Notes:
  • You can sugar can be replace with  jaggery.
  • Or you can add cashew,raisins,coconut,little saffron...

Oats and Wheat Flour Chilla (Pancake) Recipe.


Prep Time:5 Minutes.
Cook Time:4-5 Minutes per chilla(Pancake)

Ingredients:

  • 1 Cup-Wheat flour
  • 1/2 Cup-Masala oats or plain oats 
  • 1 tbs-Turmeric powder
  • Salt to taste.
  • Water.
Direction:How To Make.













  • Add wheat flour and masala oats ,turmeric powder,salt to taste  to the bowl,pour water as needed and make a batter that is not very thin or thick.
  • And then heat a pan and grease the pan with oil, and pour 1 ladle of batter.
  • Spread it gently to a slight thin pancake and drizzle oil around the edges.
  • Cook the bottom side for few minutes on low to medium flame.
  • Flip the chilla(pancake) and cook  the other side too for few minutes until its is cooked well
  • Make sure the  chilla (pancake) cooked well and brown spot are seen.
  • Repeat making the rest.
  • Serve warm chilla with Yogurt dip.

Samosa Recipe.




Prep Time:20 Minutes.
Cook Time:25 Minutes.

Ingredients:
  • 2 Cup-Maida(All purpose flour)
  •  1 tbs-Cumin Seeds
  • 1 tbs-Caraway Seeds
  • Salt to taste
  • 1/2 Cup-Oil for kneading
  • 3-4-Medium potatoes ,boiled, mashed
  • 1 tbs-Turmeric powder
  • 1 tbs-Dry fenugreek leaves
  • 1 tbs-Garam masala
  • Chopped coriander leaves
  • Oil for frying
  • Mould for making samosa 
  • Water for kneading
Direction:How To Make.
Samosa Dough:




  • In a large bowl add flour,salt,cumin seeds,caraway seeds,oil, rub the oil with flour till it resembles bread crumbs,start adding little water and knead it into a firm dough,the consistency of the dough should be form and smooth.,cover the dough with a cloth and set aside for 10-15 minutes.
Samosa Filling:


  • Boiled potatoes and mashed them,and mix with turmeric powder,salt to taste,dry fenugreek leaves,chopped coriander leaves,garam masala,mix well.
Now lets see how to fill samosa:










  • Take a lime size bowl of dough,roll it in to circle and olive shape.
  • I'm using samosa maker,so place the dough covering on this modules,now take around 1 1/2 tbs potatoes mixture and place inside covering,now press it gently to set up the mixture,just remember not to overfill samosa with potatoes mixture,otherwise it can be break and open samosa during frying now gently close it and press with little pressure to close it well,remove extra dough while keeping the module pressed,you can reuse this extra dough,now open it and press samosa ending to make sure its closed well.
Frying Samosas:






  • Heat the oil in wok/kadai, check the oil is hot enough,add a tiny piece of dough to the oil and if the bubbles and floats on the surface,your oil is ready  for frying,add the samosas to the oil make sure not to overcrowd the pan,and reduce the flame to a simmer,and make sure to keep flipping them in between cooking time,fry the samosas on low flame till golden brown on either side
  • Take them out on a plate lined with paper to absorb any extra oil .
  • Serve them immediately with ketchup,coriander chutney or tamarind chutney or tea.
