Zucchini And potato Kofta Curry Recipe.






Cooking Time:30 Minutes.
Ingredients:

  • 2 Medium -Zucchini,peel,grated
  • 3 Medium -Potato,peeled,boiled
  • 1 Cup-Besan,(Gram flour)
  • 1/2 Cup-Whole flour
  • 2 Onion-Paste
  • 2 Tomato-Paste
  • 1 Cup-Full fat milk cream
  • 1 tbs-Turmeric powder
  • Salt to taste
  • 1 tbs- Cumin seeds
  • 1 tbs-Dried fenugreek leaves
  • Oil for deep  fry and cooking
  • Water.
Direction: How To Cook.










  • First wash ,trim and peel ,grate the zucchini,and squeeze out as much liquid as you can,using your hands  and reserve the liquid you press out,it will be used in the gravy, and also boil the potato and mash them.
  • And  put the  grated zucchini and mash potato  in a large bowl and mix well and  add wheat  flour and gram flour and  1 tsp salt and 1 tsp turmeric powder and mix well and make small lemon size ball with this mixture.
  • Heat the 1 1/2 inches oil in the kadai/pan  on medium flame and then deep  fry these balls in this pan,put in about 5 or 6 of the balls-fry for about 2 minutes,turning them until you get a nice brown coat, remove with a slotted spoon and leave to drain on paper towel.
Make The Curry Gravy.












  •  Heat about 2 tbs oil in a pan/kadai and add cumin seeds  when its start crackling then add onion paste and cook for 2-3 minutes and then add tomato paste and cook another 2 minutes and then add salt ,turmeric powder,dried fenugreek leaves and mix well and add just small quantity of water and cook another 1 minutes and then add  full fat milk cream, and zucchini juice,if you are short,top up with water and mix well and cook for another 5 minutes and add  zucchini,potato balls in the gravy  and  cover the pan with lid for 5 minutes,and  switch off the flame.

Simple Carrot,Peas,Potato Sazi Recipe.




Cooking Time:15 Minutes.

Ingredients:

  • 2 Cup=Carrot,chopped
  • 2 Cup-Green pea
  • 2 Cup-Potato,chopped
  • 1 Onion,chopped
  • 1 tbs-Ginger,chopped
  • 1 tbs-Turmeric powder
  • Salt to taste.
Direction: How To Cook.









  • First wash the carrot,potato.peas and then chopped the carrot,potato.
  • Heat the oil in the pan/kadai and the add chopped onion,ginger and saute for 2 minute or till onion become light golden.
  • And then add carrot,potato,peas and mix well and then add turmeric powder and salt and good mix well and cook for 10-12 minutes on  medium flame ,till carrot and potatoes and pea are well cooked.
  • Keep stirring it in between so that it does not stick to the bottom of pan.
  • When all veggie are done then switch off the flame.
  • Serve  hot with roti/paratha/pori.

MalaI Kofta Recipe.





Cooking Time:20-25 Minutes.

Ingredients:
  • 200 gram -Paneer(cottage cheese),mashed
  • 3-4- Potatoes,boiled,mashed
  • 1/2 tsp-Grated ginger
  • 1-2- Onion ,chopped
  • 2 -Tomato,chopped
  • 1 and half Cup-Milk cream
  • 1/2 Cup-Besan(Gram flour)
  • 1/3 Cup-Wheat flour
  • 1 tbs- Turmeric powder
  • 1 tbs- Cumin seeds
  • 1 tsp -Red chilli powder
  • 4-5 -Bay leaf
  • Salt to taste
  • Water
  • Oil for fry and cooking.
Direction: How To Cook:
Making  kofta :









  • In a large bowl mix  the boiled potato mashed and paneer together and also add 1 tsp salt in the mixture and  make medium sized balls.
  • And heat the oil in the kadai/pan on medium flame, and   in a bowl  add besan(gram flour) and wheat flour  and add just small quantity of water and mix well,then use this  paste for coating the kofta,fry the paneer koftas in medium hot oil till golden.
  • Keep the fried Kofta aside.
Making malai kofta gravy:









  • And heat 2 tbs  spoon in the kadai/pan and add cumin seeds when they crackling and then add onion  and ginger ,and fry till they become golden and then add chopped tomato and saute for 1-2 minutes, and add bay leaf  and  dried fenugreek leaves , turmeric powder ,salt ,red chilli powder and mix well and add little amount of water and cook for 1-2 minutes and then add full fat milk cream and add some 1 cup of   water and cook for 5-8 minutes and  for garnish add chopped coriander leaves.
Serving malai kofta:





  • Lastly add the fried paneer kofta ,if serving malai kofta later,you can just  prepare the gravy and add kofta while serving,these paneer kofta are really soft, so if you add them before and serve them later,they will break.
  • So place the koftas  to a serving dish and then transfer the gravy  on the koftas .
  • Serve with roti/naan/rice..
