Aloo Puri Recipe.



 

Cooking Time:15 Minutes.

Ingredents:
  • 3-4 Medium sized potato,boiled
  • 2 Cup- Wheat flour
  • Salt to taste
  • 1 tbs- Turmeric powder
  • 1 tbs-Dried fenugreek leaves
  • 1tbs- Dried Mango powder(Optional)
  • Water as required to knead dough
  • Oil for deep frying.
Direction:How To Cook.


















  • Firstly,in a large mixing bowl ,add whart flour and then add boiled mashed paotao and add salt,turmeric powder,fenugreek leave,mango powder and then mix  them with flour and paotao well.
  • Now slowly add water as required and prepare a stiff dough.
  • Make a tight and stiff dough as you make for puri.
  • Make small lemon sized balls  fo the dough. and take couple of drops of oil on your palm and roll the dough in balls and press it between your palms.
  •  Roll the dough into about 5 inch diameter.,if the dough is sticking to the rolling surface,put couple of drops of oil on the rolling surface.
  • Heat about one inch of oil in frying pan on medium high heat,to check if oil is hot enough place a small piece of dough in oil and dough should float the top right away.
  • Place the puri in the frying pan and press it with a skimmer,puri should puff right away.
  • Turn puri over,puri should be light creany brown from both sides,take the puri out and place it on paper towles to absord the excess oil.
  • Serve puri with yogurt dip ...

Onion,Tomato Parathas Recipe.



Cooking Time:1 or 2 Minutes per paratha.

 Ingredients:
1 Cup-  Finely Chopped onion
1 Cup- Finely Chopped Tomato
2 Cup-Whole wheat flour
Salt to taste
1 tbs- Turmeric powder
1 tbs-Dried fenugreek leaves
1 tbs- Cumin seeds
Water for kneading.


Direction:How To Cook.

 Prepare the stuffing:





  • Heat a tsp of oil in a non-stick pan,add cumin seeds,when its start crackling then add onion and saute for 2-3 minutes and then add chopped tomato and saute for 1 or 2 minutes and then add salt,turmeric powder,dried fenugreek leaves and mix well and cook for another 1 minute,and then switch off the flame and keep aside to cool.
Preparing the dough:


  • Put wheat flour in a large mixing bowl,add water gradually and knead into a soft dough
Stuff it:







  • Make small-medium balls of the dough  and  roll with a rolling pin,make a small roti and place a 1 tbsp of prepared stuffing on the centre.
  • Cover from all the side,dust some flour and roll again to make a proper parantha.
  • Make sure the stuffing should not come out,for that seal the sides with some water on the edges so the stuffing does not come  out.
  • Heat a tawa and drizzle few drops of oil.
  • Place the stuffed parantha gently on the tawa and roast it from both sides by greasing it with oil or ghee.
  • Serve hot with curd and pickle of your choice.

Beetroot Roti Recipe.





Cooking Time:2 minutes per roti.

Ingredients:

  • 1 Cup-Beetroot,grated
  • 2 and half Cup-Wheat flour
  • Water for kneading
  • Oil 
Direction:How To Cook








  • First peel the beetroot and grate it
  • In a bowl take whole wheat flour and add grated beetroot and mix well, now add little water at a time and keep kneading till you get smooth and soft dough.
  • Cover the dough for 8-10 minutes.
  • And then take small portion of the dough and make a smooth ball out of it and roll it  using a rolling pin just like rotis.
  • Cook the rotis on a heated tawa,use some oil or ghee for cooking,press slightly both the sides.
  • Flip again once or twice till both the sides and cooked properly.
  • Finally serve beetroot roti with Raita (Yogurt dip)and pickle.

Sooji Cheela(Semolina Pancake) Recipe.





Cooking Time:4-5 Minute per cheela(pancake)

Ingredients:

  • 1/2 Cup-Sooji(Semolina)
  • 1/2 Cup-Curd(Yogurt)
  • 1 Carrot,grated 
  • 1 Onion slices
  • salt to taste 
  • 1 tsp-Turmeric powder
  • 1 tsp-Red chilli powder(Optional)
  • 1 tsp-Gram masala(Optional)
  • Water
  • Oil for cooking.
Direction:How To Cook.


















  • Firstly ,grate the  carrot  and cut the onion into slices.
  • Take a bowl and add semolina(sooji) and add yogurt and  add grated carrot ,onion slices,red chilli power,salt,garam masala ,turmeric powder and  add 1/4 cup water and mix well and make  a smooth batter.
  • The batter  should neither be too thick or too liquid,maintain a dropping consistency.
  • Heat a pan and  spread a bit of oil in it. 
  • Take a ladle of the batter and gently spread the batter on the pan to make small to medium cheela.
  • Pour 1 tsp of oil around the edges.
  • Cover and cook the cheela(pancake) for 2 minutes on a low to medium flame, and till it gets cooked well.
  • When the base has cooked and become light golden,then flip and cook the other side and sprinkle  some oil on the top.
  • When the second side gets light golden,then remove the sooji cheela(pancake) .
  • Serve sooji cheela hot or warm with any chutney or sauce or with butter.

Cauliflower Kofta Sabzi Recipe.



Cooking Time:30 Minutes.

Ingredients:
  •  Medium -Cauliflower,grated
  • 2 Cup-Besan,(Gram flour)
  • 1/2 Cup-Whole flour
  • 2- Onion,chopped
  • 1- Tomato,chopped
  • 1 Cup-Full fat milk cream
  • 1 tbs-Turmeric powder
  • Salt to taste
  • 1 tbs- Cumin seeds
  • 1 tbs-Dried fenugreek leaves
  • Oil for deep  fry and cooking
  • Water.
Direction: How To Cook.


  • First wash  the cauliflower and soak for 5-10 minutes in warm water and then dry and then  ,grate the cauliflower,and squeeze out as much liquid as you can,using your hands  and reserve the liquid you press out,it will be used in the gravy.






  • And  put the  grated cauliflower  in a large bowl and  add wheat  flour and gram flour and  1 tsp salt and 1 tsp turmeric powder and mix well and make small lemon size ball with this mixture.





  • And heat the oil in the kadai/pan on medium flame, and   in a bowl  add 1/2 cup besan(gram flour) and 2 tbs wheat flour  and add just small quantity of water and mix well,then use this  paste for coating the kofta,fry the paneer koftas in medium hot oil till golden.fry for about 2 minutes,turning them until you get a nice brown coat, remove with a slotted spoon and leave to drain on paper towel.
  • Keep the fried Kofta aside.


Make The Curry Gravy:












  • Heat about 2 tbs oil in a pan/kadai and add cumin seeds  when its start crackling then add  chopped onion  and cook for 2-3 minutes and then add tomato chopped and cook another 2 minutes and then add salt ,turmeric powder,dried fenugreek leaves and mix well and add just small quantity of water and cook another 1 minutes and then add  full fat milk cream, and cauliflower juice,if you are short,top up with water and mix well and cook for another 5 minutes and cauliflower  balls in the gravy  and  cover the pan with lid for 5 minutes,and  switch off the flame.
  • Serve with roti/naan/rice !!!!!!!!!!!!!!
