Egg plant(Brinjal )Besan Curry Recipe.





Cooking Time :25 Minutes.

Ingredients:

2- Long  egg plant(Brinjal)  round sliced
2-Onion chopped
2-Tomato chopped
2 tbs- Besan(Gram flour)
1 tbs- Tomato paste
1 tbs- cumin seeds
1 tbs- Turmeric powder
1 tbs- Coriander powder
I tbs- mixed Italian herbal
Slat to taste
water
oil
Chopped fresh coriander leaves.

Direction: How To Cook This.



  • Firstly clean the eggplant and cut into round slices.
  • And then add 2 tbs of besan(Gram flour) in the bowl and add 2 cup of water and mix well,and make sure don't be lump inside,whisk well.









  • And then add 1 tbs oil in the pan and then add cumin seeds when its start crackling then add onion and saute for 2 minutes or till onion turn light brown and then  chopped tomato and cook for 1 minutes and then add tomato paste and mix well and then add coriander powder, Italian herbal ,turmeric powder and salt to taste and mix well and then add eggplant sliced and mix well,and then add besan(Gram flour)batter and mix well and cover the pan and cook for 15-20 minutes  and  till eggplant become soften, cook on  medium flame and stir occasional


  • When its cooked and then add chopped fresh  coriander leaves.
  • Serve with  any main dish with eggplant(Brinjal) besan curry.

Stuffed Bitter Guard Recipe.





Cooking Time:25 Minutes.

Ingredients:
2-Bitter Guard
3-Onion chopped
1 tbs- Cumin seeds
1 tbs-Coriander powder
1 tbs-Cumin powder
1 tbs-Turmeric Powder
1 tbs- Tomato paste
1 tbs- Mango pickle or Mango powder
1 tbs - Green coriander chutney 
oil for cooking
Salt to taste




Direction:How To Cook This.




  • Clean and peel some of the bumpy skin off of the bitter guard,and then make a slit along the middle and spoon out any seeds, and then add 1 tbs oil in the pressure cooker and put these karelas(bitter guard) into pressure cooker ,cook them for one whistle and remove from cooker and keep it dry for some time.  




  • Heat the 2 tbs oil in the pan/kadai and then add cumin seeds and when its start crackle and then add chopped onion and cook for 2-3 minutes or till the onion turn light brown and then add coriander powder and salt to taste and cumin powder  and mix well and then add  coriander green chutney and 1 tbs tomato paste and turmeric powder and add 1 tbs mango pickle and mix well and cook for 2-3 minutes,and then switch off the flame .



  • And after that take karela and stuff the masala into using spoon and press the stuffing properly,so that it does not come out, and you can tie them lightly with tooth pick to make sure they hold together.
  • And in the same pan and little oil  and put all the stuffed karelas into it and fry for 10 minutes,once they fried, remove from heat and take the toothpick off,  and serve hot with roti,naan.

Pumpkin Cheese Soup Recipe.



Pumpkin Soup

Cooking Time:10 Minutes.


Ingredients:

  • 1 Cup-Chopped Pumpkin
  • 1 Tomato-Mashed
  • 1 tbs- Tomato paste
  • 1 tbs-Jaggery 
  • 2 and half cup of water 
  • 3 tabs- Mashed ricotta cheese 
  • Chopped  fresh leaves  coriander for  garnish
  • Salt to taste
  • 1 tsp-Dried crushed fenugreek seeds
  • 1 tsp- Cumin seeds
  • 2 tbs- Olive oil.
Direction:How To Cook This.



  • Firstly, heat the oil in the pan and then add dried crushed fenugreek seeds and cumin seeds and  fry for 1-2 minutes and then add chopped pumpkin  and add salt to taste and cook for 5 minutes while cooking cover the pan with lid.


  • And then add mashed tomato and tomato paste and mix well, and cook for another 1-2 minutes.





  • And then add water and  cook for 2-3 minutes and then add jaggery and also add mix herbal and mix it well and then switch off the flame and  use a stick blender to puree the pumpkin ( or cool slightly and do in blender).


  • And then add ricotta cheese and chopped fresh coriander.
  • Serve with crusty bread.

Bread Rasmalai Recipe.






Cooking Time:40 Minutes.

Ingredients:


  • 4 Cup of full cream  milk 
  • 100 gram-Condensed milk
  • 1/4 Cup -Ready made custard
  • 1 tbs- Green cardamon seeds or powder
  • 1 tbs- Almond slices
  • 1 tbs- Pumpkin seeds.
Direction: How To Cook This.
  • Firstly, in a pan heat thick full cream milk.

  • Stir occasionally making sure the milk doesn't stick  to bottom .

  • Stir well and get the milk boil.

  • And then add condensed milk.


  • Stir well and get the milk boil.
  • And also  reduce the flame to medium,and once a layer of cream is formed over the milk,stick it to sides of vessel.
  • Make sure to stir from bottom of vessel so that milk doesn't burn.
  • And repeat the gathering of cream to sides of pan for at least 3-5 times or till reduce to one-third.

  • And then add custard and give a good mix and get the again to boil
  • Furthermore,simmer for 2 minutes.

  • And then place in to the bowl and  allow it cool to room temperatures .


  • Now cut the bread  into round pieces with the help of cookie cutter or glass.




  • and place the bread in to plate,make sure to pour enough rabdi in plate.

  • Further,serve garnished with chopped almond ,green cardamon seeds,pumpkin seeds.




  • Finally serve bread rasmalai chilled or hot.(if you want to eat rasmalai chilled then put in to the refrigerator for 2 hour and then serve)
