Zucchini and Soya Chunks Curry


Total Time:30 Minutes
Prep Time :10 Minutes
Cook Time :20 Minutes


Ingredients :

  • Zucchini-Half Kg.
  • Boiled Soya Chunks-2 Cups.
  • Onion-1(Chopped)
  • Ginger-2-3 Slice (Chopped)
  • Turmeric powder-1 tbs.
  • Red Chilly Powder-1 tbs.
  • Cumin Seeds-1 tbs.
  • Garam Masala-1 tbs.
  • Tomatoes Paste-1 1/2 tbs
  • Salt to taste.
  • Cup of milk-1/2.
  • Cup of Water-1/2.


Direction:
  1. Wash Zucchini and peeled them and cut in to chunks (According to your choice).







2. Boil the Soya Chunks for 5-6 minutes and pour in to a sieve and squeeze out any excess water.


       
3. Heat 1 tbs oil, add cumin seeds, then chopped onions ans saute till the onions turn light brown. Then add ginger (chopped), turmeric powder, red chilly powder, salt to taste, garam masala, stir continuously, add tomatoes paste and let the mixture cook for at least 5 minutes.

4. Now add Zucchini, boiled Soya Chunks and half cup of milk and half cup of water, cover and cook the mixture for 15 minutes till when it is done, you can check the Zucchini during the cooking time, just mash one piece of the zucchini  with cooking spoon. if it is mash then it means  Zucchini is done.


 5. Finally add chopped coriander and turn off the flame.


Serve hot with any roti varieties or rice.
