Kaddu(Pumpkin) Ki Sabzi Recipe



Total Time:30 Minutes.
Prep Time:10 Minutes.
Cook Time:20 Minutes.

Ingredients: 
  • 1 Small Pumpkin (Kaddu)
  • Half cup of fresh green fenugreek leave(chopped)
  • 1-Medium Onion.
  • 1 tbsp- Cumin seeds.
  • 1 tbsp- Red chillies powder.
  • 1 tbs-Turmeric powder.
  • 1/4 tbs-Garam masala powder.
  • 1 tbs- Dry mango powder.
  • 1 tbs- Sugar/ Jaggery 
  • 2 tbs-Oil.
  • A few chopped coriander leaves for garnishing.
  • 1/2 - Cup of water.
  • Salt to taste.
Directions:
How to Cook This Recipe:

  1. Wash the pumpkin, peel and chop the pumpkin and wash the green fenugreek leaves  & chop them finely.
  2. Heat the oil in a pan on medium heat, and add cumin seeds, then add onion, cook until the onion become tender, add tomato paste, red chilli powder & stir them, add turmeric powder and the chopped pumpkin and all the dry spice powders except garam masala and dry mango powder.
  3. Mix the pumpkin with the rest of the spices and sugar/jaggery, add water and salt to taste. 
  4. Cover the pan with a lid and cook for 20 minutes.
  5. Now mash the cooked and soft pumpkin with a spoon and add garam masala, dry mango powder and green fenugreek leaves.
  6. Stir the pumpkin well and cook for 2 minute.
  7. The sabzi should not be dry or watery, just in between.
  8. Garnish with coriander leaves / butter and serve kaddu(pumpkin) ki sabzi.
