Cook Time:20 Minutes.
Ingredients:
- 1 Small Pumpkin (Kaddu)
- Half cup of fresh green fenugreek leave(chopped)
- 1-Medium Onion.
- 1 tbsp- Cumin seeds.
- 1 tbsp- Red chillies powder.
- 1 tbs-Turmeric powder.
- 1/4 tbs-Garam masala powder.
- 1 tbs- Dry mango powder.
- 1 tbs- Sugar/ Jaggery
- 2 tbs-Oil.
- A few chopped coriander leaves for garnishing.
- 1/2 - Cup of water.
- Salt to taste.
How to Cook This Recipe:
- Wash the pumpkin, peel and chop the pumpkin and wash the green fenugreek leaves & chop them finely.
- Heat the oil in a pan on medium heat, and add cumin seeds, then add onion, cook until the onion become tender, add tomato paste, red chilli powder & stir them, add turmeric powder and the chopped pumpkin and all the dry spice powders except garam masala and dry mango powder.
- Mix the pumpkin with the rest of the spices and sugar/jaggery, add water and salt to taste.
- Cover the pan with a lid and cook for 20 minutes.
- Now mash the cooked and soft pumpkin with a spoon and add garam masala, dry mango powder and green fenugreek leaves.
- Stir the pumpkin well and cook for 2 minute.
- The sabzi should not be dry or watery, just in between.
- Garnish with coriander leaves / butter and serve kaddu(pumpkin) ki sabzi.
