Lauki(Bottle Gourd) Kofta(Dumplings) Recipe



Total Time:35 Minutes.


For Kofta(Dumplings)
Ingredients:
  • 1 Kg-Bottle gourd/Lauki(Grated)
  • 1/2 Cup-Gram flour
  • 1/3 Cup-Wheat flour
  • 1 tsp-Red chilli powder
  • 1 tsp-Turmeric powder
  • 1 tsp-Dry fengureek leaves
  • Salt to taste
  • Oil to deep fry
Direction:How To Cook Kofta(Dumpling)









  • Peel and grated lauki(bottle gourd),squeeze out the water completely,and keep this water for gravy
  • Take squeezed grated lauki(bottle gourd) in a large bowl,add wheat flour,gram flour,red chilli,turmeric powder,dry fengureek leaves,salt to taste.
  • Mix all ingredients well,mixture should have a thick consistency to make round shaped balls,if it is watery then add 1-2 tablespoon gram flour and mix.(Don't keep this mixture for long time otherwise lauki(bottle gourd) release water over time and it will make mixture soggy and you will not be able to make kofta balls. make lemon size balls.
  • Heat oil in a frying pan/kadai over medium flame for deep frying,when oil is medium hot,add 3-4 balls at a time,deep fry until they turn light golden brown and crisp, stir occasionally,drain on absorbent paper and set aside.
For Gravy
Ingredients:
  • 1-Onion chopped
  • 2-Tomato puree
  • 1 Cup-Yogurt(Curd)
  • 2 Cup-Water
  • 1 tsp- Red chilli powder
  • 1 tbs-Turmeric powder
  • 1 tbs-Ginger,chopped
  • 1 tbs-Gram masala
  • Salt to taste
  • Chopped fresh green coriander leaves
Direction: How To Make Kofta Gravy:










  • Heat 2 tbs oil in kadai/pan over medium flame,add cumin seeds and cook until they sizzle and add onion,stir fry until it turn light brown, add ginger,red chilli powder,turmeric powder,garam masala,salt to taste and stir them and add tomato puree and mix well and stir-fry for a minutes.
  • Add thick yogurt(curd) and mix and add 2 cup of water and also add that leftover lauki water, mix well and cook for 5-6 minutes, stir in between occasionally.
  • Add fried kofta balls to the gravy
  • Cook for another 5-6 minutes and switch off the flame and garnish with chopped coriander leaves
  • Transfer it to a serving bowl and eat with roti/naan/rice.
