Total Time:15-20 Minutes.
Ingredients:
- 2 tbs-Olive spread
- 1-Onion chopped
- 1-Carrot chopped
- 4-Medium Tomato,chopped,deseeded
- 1/2 Cup-Rice boiled
- 1 tbs-Ginger chopped
- 1 tbs-Dry fenugreek leaves
- 1 tbs-Turmeric powder
- Salt to taste
- Pepper to taste
- Water,according to consistency
- 1/2 Cup-Chopped fresh green coriander
Direction:How To Cook.
- Heat olive spread/butter in a large pot.
- Saute onion,ginger,and add dry fenugreek leaves,turmeric powder,mix well
- And add chopped tomato,carrot and 3 cup of water and cook for 8-10 minutes until tomatoes and carrot become tender or softens, cover the pot with lid,and stirring in between.
- In the meantime,you can cook the rice separately, wash and drain the rice and put in to the pan ,add water,oil,salt,bring to a boil and turn the heat to low,cover the pan.cook rice for about 10 minutes or until the rice is tender and water has evaporated.
- And when tomatoes and carrot become tender, remove the heat and allow to cool.
- Blend to desired consistency
- After blend, add water according to your choice,its up-to you , how thick you want soup .
- And then add boiled rice and salt to taste and black pepper to taste, mix well, cook another one minute.,and add chopped coriander and then switch off the flame.
- Serve hot/warm soup with roasted bread.
