Pumpkin Soup |
Cooking Time:10 Minutes.
Ingredients:
- 1 Cup-Chopped Pumpkin
- 1 Tomato-Mashed
- 1 tbs- Tomato paste
- 1 tbs-Jaggery
- 2 and half cup of water
- 3 tabs- Mashed ricotta cheese
- Chopped fresh leaves coriander for garnish
- Salt to taste
- 1 tsp-Dried crushed fenugreek seeds
- 1 tsp- Cumin seeds
- 2 tbs- Olive oil.
- Firstly, heat the oil in the pan and then add dried crushed fenugreek seeds and cumin seeds and fry for 1-2 minutes and then add chopped pumpkin and add salt to taste and cook for 5 minutes while cooking cover the pan with lid.
- And then add mashed tomato and tomato paste and mix well, and cook for another 1-2 minutes.
- And then add water and cook for 2-3 minutes and then add jaggery and also add mix herbal and mix it well and then switch off the flame and use a stick blender to puree the pumpkin ( or cool slightly and do in blender).
- And then add ricotta cheese and chopped fresh coriander.
- Serve with crusty bread.
